I have to admit that I have really, really tried to like overnight oats for an easy morning breakfast. I just can’t do the mushy oats—the texture just tastes so soggy but I really loved the idea of it. So the other day I thought why not make my favorite hot gluten free oatmeal and turn it into a parfait.
I tested a batch out and had my husband and son taste test for me. It honestly could’ve gone either way and to my surprise my son was gobbling it up. He even said it’s “the best oatmeal he has had.” I finally hit a breakfast idea out of the park! It’s so simple to whip these up, layer them, and put them in the refrigerator for the next day. If you’re looking for a healthy option for you and the kids, this will be on rotation for you and your family!
Recipe:
- 2 cups of gluten free or regular oatmeal
- 4 cups of water
- 1 Tablespoon of coconut sugar
- 2 teaspoons of vanilla extract
- 4 teaspoons of chia seeds (1 teaspoon per container)
- 4 Tablespoons of honey ( 1 tablespoon per container)
- 1 cup of fresh raspberries
- 1 cup of almond milk
- 4 containers or mason jars
Instructions:
Put 2 cups of oatmeal into a saucepan with 4 cups of water on high heat. Get the oatmeal to boil and then once boiled put the heat on low. Cook the oatmeal for 15 minutes until it’s fully cooked. Then mix in the vanilla and coconut sugar. You can sub brown sugar. It should be thicker, but not super thick. Let the oatmeal cool—it will get thicker as you cool it.
Once cooled, start to assemble the parfaits. It will depend on the size of your jar, but I recommend starting by filling your container a quarter of the way full with oatmeal. Then pour 1 teaspoon of chia seeds on top of the oatmeal and top with 1/4 cup of almond milk. The milk will soak the chia seeds. Then place the fresh raspberries on top. Lastly, drizzle honey on top. Place the containers in the refrigerator for overnight and enjoy for breakfast the next day.
You can sub out anything on this parfait. Plus, you can add cinnamon, nuts, coconut, and more mixed berries. The options are endless.
